The distillery Ailsa Bay

In the heart of the Scottish Lowlands sits the charming town of Girvan, home to the iconic Ailsa Bay distillery, founded in 2007. Named through inspiration from one of the most beautiful islands off the coast of Scotland, the Isle of Ailsa Craig. For over a decade, the distillery has been producing malt whisky which was primarily used for blenders, corresponding to the blending of several eaux-de-vies. Since 2018, the distillery has adapted its activities and especially its distillation methods, which have been modernised to create whiskys with the perfect balance of peaty aromas and gourmet flavours. The distillery is also well-known for being the first house to have created eaux-de-vies with both a peatiness and sweetness index on the bottle. The distillery also stands out for its staple ageing process which uses accelerated maceration, providing the whiskys all the deliciousness they are known for. So it's in a peaceful, innovative context that Ailsa Bay creates delicious, perfectly balanced whisky.
