The distillery Habitation Saint-Etienne (HSE)

In 1882, Saint Etienne was bought by Amédée Aubéry, who carried out major renovation work on the former Martinique sugar refinery to create a rhum agricole distillery. The factory is known for its magnificent 28-window façade built to improve ventilation in the building. Today, the property is masterfully run by Yves and José Hayot, who have been at the helm since 1994. The rum is produced from sugar cane harvested between February and June. In order to carefully preserve the juice, it is quickly sent to the distillery, where it is pressed and fermented using methods specific to each individual juice. The spirit is then diluted with water from the river near the estate. The rums are aged in oak casks and exotic casks, giving them roundness and their unique aroma palette, an emblem of high-quality Martinique rum.
