Domain: Lagg

Arran Island, located in Scotland, is home to the Lagg distillery where the aim is to produce a high-quality peated single malt. The distillery selects barley from the estate, which is then malted so that germination can begin. The barley is then dried in a kiln, in which peat from both Scotland and abroad is burnt, allowing Lagg to experiment with the effects of peat on the whiskies. The dried barley is then ground and crushed with water before adding the yeast essential for fermentation. It is this last stage that allows the sugars to transform into alcohol and become what is commonly known as the “wash”. After double distillation, the brandy is finally aged in oak casks for several years. The distillery explores all the possibilities by varying the barley, the yeast strains and even certain stages of production. In addition to this research activity, Lagg produces 500,000 litres of spirits every year. The estate has also planted more than 140 apple trees, from which they make their own cider and apple brandy.
