Domain: Adrien Camut

The Semainville estate is owned by the Camut family, who produce Calvados Pays d’Auge. It spans 45 hectares of high-stem apple trees grown without the use of pesticides, aided only by the property’s cows. It is home to some 30 ancient varieties of mainly bitter-sweet apples, chosen for their high quality and low yield. Pressing is completed with a Bücher pneumatic press. The apple juice produced is fermented in wooden barrels. The cider stays on its lees until September, when it is distilled in a Charentais still patented by Adrien Camut in the 1970s and heated with apple tree wood. The eaux de vie are then aged for at least six months in oak barrels. The Calvados are finally bottled by hand without filtration.
