Domain: Don Papa

The Don Papa distillery was founded in the heart of the Philippines by Stephen Carroll in 2012. It is named after a famous 19th century revolutionary who played a key role in the country’’s history and whose eye appears on every label. Instantly falling in love with the rich terroir of the island of Negros, he realized the soils there was also excellent for growing sugar cane. Here the plants are heavier and have a higher sugar content. All of which helped build the brand’’s reputation. Before long ageing in American oak casks, several doses of sugar are also added to the rum in the producer’’s signature process. In this peaceful context, the distillery creates outstanding rums whose rich, fruity aromas reflect the aromatic wealth of the Philippines terroir.
