Donated by Kilchoman Distillery

It was on the Isle of Islay in 2005, a windswept island off the west coast of Scotland, that Kathy and Anthony Wills founded the family-run independent farm distillery Kilchoman.Kilchoman has donated a real slice of the distillery’s history for this wonderful auction: an exclusive bottle produced from cask n° 07/2005. This cask, the seventh filled by the distillery, was sealed on 14 December 2005, the same day as the distillery's very first cask. This bottle is a rare and precious witness to the early days of Kilchoman.
This emblematic piece captures the pioneering spirit of Kilchoman, offering to admirers a true journey through time and the opportunity to discover the original essence of the distillery. Aged for more than 15 years in old bourbon casks, this rare bottling unveils captivating aromas of ripe apples, pears and honey. On the palate, it reveals exotic flavours with tropical and citrus fruits, enhanced by a subtle, beautifully integrated peat smoke reminiscent of the wild lands and windy shores of Islay.

The distillery Kilchoman

Scotland, Isle of Islay. Distillery operational. Owner: Anthony Wills

Like the Arran distillery, Kilchoman was the first distillery to be built on the Isle of Islay for over 120 years. The most recent arrivals before it were Bunnahabhain and Bruichladdich, both founded in 1881. It was at the initiative of Anthony Wills that Kilchoman distilled its first malt in 2005. In doing so, it renewed a tradition dear to Scotland, producing whisky at an independent, family-owned farm distillery. Anthony watches over the grain with the help of his wife and three sons. Nothing is left to chance, from the ageing in bourbon casks, to packaging and bottling. No cask of Kilchoman seems able to escape his watchful eye, as is demonstrated by the very low number of independent bottlings released to this day.
