A Bimber single cask (#216) matured in a rye cask and bottled in 2021 for La Maison du Whisky’s annual creation catalogue A La Conquête des Origines. Right from the start this version clearly displays its love for the glimmering, heady world of American rye whiskey. A perfect osmosis of malted barley and rye, the aroma and flavour palette reveals an impressively mature expression. With notes of precious wood and candied fruit as well as heady flavours and chocolate, roasted notes, it paints a beautiful autumnal picture. A limited edition of 268 bottles.

The distillery Bimber

The Bimber distillery, built in 2015 in Park Royal, in north-west London, was the first distillery to appear in the capital for over a century, following the closure of the last in 1903. Bimber, which is Polish for “illicit alcohol’‘, was named by founder Dariusz Plazewski, who grew up in a family of distillers and moved to London in 2003. Distillation began the following year and the first single malt was released in 2019. The company sources its barley from a single producer, uses traditional malting floors and favours slow fermentation (seven days in wooden washbacks). This artisanal approach continues with the use of gas-fired Spanish Hoga stills. The ambitious distillery has met with great success and new editions are always highly awaited.
